Eating Healthy: Apple Cinnamon Crepes

momstown Mississauga members are on a journey this month to get healthy! This easy recipe is made from scratch with ingredients most people have right in their pantry. Modify with whole wheat flour, egg replacements, almond milk or gluten free flour - make these with whatever you have on hand and fit this delicious recipe into any diet.

 
Ingredients:
 
1 cup flour
1 tsp baking powder
1/2 tsp salt
2 Tbs brown sugar
2 Tbs butter - divided
1 cup milk
1tsp vanilla
3 Eggs
3 Apples
Cinnamon
 
To Prepare the Apples:
 
Peel and thinly slice 3 apples. Cook in frying pan with 1Tbs of butter until soft. Add in cinnamon and brown sugar and cook for a few more minutes. Keep warm until crepes are ready.
 
To Prepare Crepes:
 
Combine all the dry ingredients and set aside. Whisk eggs and milk in a bowl, add in vanilla and the remaining Tbs of butter (melted and cooled). Whisk in the dry ingredients.
Pour by 1/4 cup into heated non-stick frying pan - tilt the pan to spread the batter in an even thin layer.
 
Cook for 1-2 minutes until the top appears dry, then flip over and cook an additional minute until lightly browned. Keep warm until ready to serve.
 
Layer apples in the middle of crepe, roll up and eat with fresh fruit on the side!

Healthy Eating: Cutting the Calories in Your Coffee

Last year, I changed my eating habits and not only did I feel better, but I lost some weight as well!  I managed to maintain my results for several months, but then recently found that my lazy habits were slowly making their way back into my life and a few of those unwanted pounds too!  I decided enough was enough and decided to clean up my eating once again.  I had been doing so well, and I wasn’t going to throw all of that away. 

Previously I had given up my coffee completely, because, let’s be honest, if I can’t have it with my milk and sugar, I don’t want to have it at all.  So, I began to do some research to see if I could still have my coffee (and enjoy it!) without using milk and sugar, and I came across some recipes for homemade non-dairy creamer.  

Here's the recipe I tried.  Let me know what you think?

 
 
French Vanilla Coffee Creamer
Ingredients
1 cup coconut milk
1/4 cup plus 2 tablespoons date paste* ( recipe below)
1 tablespoon vanilla extract
 
Instructions
Whisk all ingredients in a bowl. Strain through a fine mesh sieve. Will store in a glass jar in the refrigerator for one week.
 
*Date Paste: Blend 1 cup of dates with 1 cup of hot water - added slowly. Leave to blend until smooth (about 1 minute).
 
Store in a glass container in the Refrigerator up to 1 week.

Farmer's Markets in Mississauga



momstown Mississauga mamas and kids are hitting the markets this summer to buy locally grown and produced fruits, vegetables and other products.   Mississauga families are lucky to be able to buy from a variety of markets as there are 3 operating in the city all summer long!

 



Square One Market is located in the parking lot beside the Movie Theatre - 309 Rathburn Road West (on the corner of Rathburn Rd & Duke of York Blvd) Mississauga, Ontario. The Square One Farmer's Market is operated by the Mississauga Central Lions Club. 

 

Check out the wide selection of Ontario's finest fruits and vegetables plus delicious homemade preserves, baked goods, syrup, eggs, cider and fresh flowers.

 

Port Credit Farmer's Market operates Saturdays from 8am - 1pm June through to October. Located at 200 Lakeshore Road East at Elmwood Avenue (in the LCBO parking lot), Port Credit, ON L5G 1G3

 

This market features locally grown and produced food along with 6 artisans. You can find two momstown Mississauga mamas there this summer with handmade items!

 

The Streetsville Farmers' Market is held Saturday mornings 8am to 1pm from mid June to mid October. Located in the Streetsville Go Station Parking lot enter off Thomas Street. 

Hosted by the Streetsville Lions Club it is also another great place to browse for locally grown produce and market items.
